Home made granola – starting the week strong!
What do you normally for breakfast? How do you start your day out – breakfast or no breakfast? This one is a tricky debate – my feeling? You do YOU, no one else will do YOU as well as YOU can do YOU.
Me? I thought I’d try my hand at homemade granola – why? A few reasons – including all the added sugars, preservatives and unnecessary things added to most store bought varieties; as well as my relationship with nuts (not the biggest fan!) and lastly for the hell of it!
Live a little, they say – try something new, they say – it will be fun, they say! Haha – well I had fun, I also made the biggest mess in the kitchen (that I am currently rolling my eyes at – because, you know, adulting is hard).
I’m quite pleased with what turned out, by far the yummiest granola that I’ve ever had – mixed with a bit of plain yogurt, a few berries and voila! A quick grab and go breakfast that will fill you with something nutritious.
There are many recipes and options of things you can add, I wanted something simple and tasty but some other things that you can add include sunflower seeds, nuts,
Ingredients
2 cups Oats
½ cup nuts (I used Walnuts) (Chopped)
½ cup desiccated coconut
½ cup honey
½ cup coconut oil
¼ cup cranberries (chopped)
¼ cup dates (chopped)
Method
Preheat your oven to 180’c
Add all of your ingredients together (leave out the raw nuts to add in last).
Add to a greased ovenproof dish and put into your oven for 20 minutes.
Pop out, give it a good mix with a fork, breaking up a few of the clumps and add back in for another 20 minutes at 115’c.
Switch off your oven and give it another good mix and leave in the warm oven for 30 minutes.
Let cool and put in airtight containers for storage!
