Protein – Gluten free – Flapjacks
Oh boy, have I tried quite a number of protein flapjack recipes! And all of them failed so well.. From the simple two ingredient banana ones, through to the Greek yogurt variety.. I tried them all! But finally I stumbled across a few that added cottage cheese to the recipe, and I found a winner! Something simple and easy – tasty treats!
I made a few personal adjustments which I think suit the mixture quite well – They are no standard flapjack recipe, but since I can no longer eat gluten or wheat flour, these make a tasty and healthier alternative! A girl needs a treat on a Saturday and sticking to my eating plan is a breeze with these babies.
Ingredients
¼ cup oat flour
¼ cup cottage cheese plain smooth
½ cup egg whites
1 tsp vanilla essence
1 tsp raw honey
½ – 1 scoop protein powder
½ tsp baking powder
pinch of salt
Method
Add all of your ingredients to your blender and mix them for a few seconds until the mixer is a smooth consistency.
Get your frying pan ready to a medium/hot heat. Add a small amount of olive oil. Pour your batter into your pan making 3-4 small rounded pancakes.
Wait until the edges of your pancakes start to cook and brown slightly (remember to keep an eye on your heat as they can burn easily). Flip and cook the other side for a few seconds.
And lastly, enjoy your masterpiece with a few berries and some raw honey!
